The corn product is processed with Potassium Hydroxide Lye to break down the skin & Chit, it is then Transfer via Water Rinsing to a cook tank & cooked with a Citric Acid Lime mixture. If we do not add the citric acid to the Hydrated Lime (aka Calcium Hydroxide) then it could potentially harm someone; however, because the Citric Acid is added to the Hydrated lime it neutralizes it. The amounts of Hydrated Lime that are used are for flavoring & not as a Lye or processing agent.
